We tend to associate dill with pickles, but this herb has a variety of uses beyond the pucker-inducing appetizer. I’ve grown dill from seed for several years in my garden. It’s easy to grow, and my dill often reseeds itself and pops back up on its own in my garden for several years, making it one of my favorite low-maintenance garden plants. If you’ve got a lot of fresh dill on your hands, it can be used in many ways in the kitchen. Here are a few ideas to help you out.
- Make vegetable dill dip. This recipe from Six Sisters makes my family’s favorite veggie dip. It’s amazing with a variety of veggies, ranging from broccoli and cauliflower to cucumbers and cherry tomatoes.
- Make refrigerator pickles. With some fresh dill, cucumbers, onions, vinegar, and spices, you can make easy pickles that don’t require hot water canning and last in the fridge for about two months. Here’s a recipe.
- Add dill to roasted potatoes. Slice or dice some golden potatoes, drizzle them with olive oil, and sprinkle on some salt, pepper, and dill. Roast in the oven until potatoes are tender inside and crisp and golden on the outside, or toss them in an air fryer.
- Sprinkle fresh dill on top of a homemade crescent veggie pizza appetizer. Here’s an easy recipe to get you started.
- Stir fresh chopped dill into your favorite potato salad.
- Sprinkle a small amount of chopped fresh dill on top of deviled eggs.
- Use a sprig of dill as a garnish. Dill goes well with tzatziki sauce, on seafood such as salmon or tilapia, or on certain soups.
- Toss a handful of fresh dill into a green salad. This goes best with a vinaigrette dressing.
- Add chopped dill to homemade oil and vinegar salad dressing.
- Use dill to make a compound herb butter. This twist on regular butter involves mixing herbs with room-temperature butter, garlic, and a few other ingredients. Here’s a recipe.
- Preserve dill by freezing or drying it. Here are instructions.
