Ingredients 1x2x3x

Adobo Sauce Ingredients

  • 1/4 Cup coconut vinegar
  • 2 tablespoons Soy Sauce
  • 1 tablespoon peppercorns
  • 2 bay leaf
  • 1 head Garlic cloves separated and crushed
  • 1 Cup pork broth reserved
  • 1 1/2 tablespoons cornstarch dissolved in 1 tablespoon water
  • crispy garlic chips

Instructions

  • Boil cane or coconut vinegar, soy sauce, black peppercorns, bay leaves, garlic, and reserved pork broth in a saucepan. Do not stir. Lower heat and simmer for 12 to 15 minutes or until sauce has reduced by a third.
  • For a thicker sauce, add cornstarch dissolved in water; whisk until thickened. Discard bay leaves. Place on a platter and top with lechon kawali. Sprinkle with crispy garlic chips, if desired.
