Ingredients

    1 Large Package of Pork Riblets (or babyback ribs1 bottle (8oz) of your favorite bbq sauce4 redskin potatoes (or whatever you have on hand!)2 yellow onions

Directions

The beauty of this recipe is it can be adapted to more or less servings very easily and it is a tasty change from the every day! (Also I believe the fat count under the nutrition calculator is lower than shown as I actually boil most of the fat right off the ribs)Preheat oven to 400 degrees FFirst cut the ribs into manageable size pieces ( - max 2-3 small ribs per piece). Put ribs into a large pot of boiling water and boil for 30 minutes, skimming fat off top as it comes together.Line a large baking sheet with foil (makes for a much easier clean up!)Wash and cut up potatoes into quarters and peel and cut up onions into slices, put potatoes and onion pieces on baking sheet.Next add cooked riblets draining off as much water as possible before putting on baking sheet.Pour barbeque sauce over all and bake in 400 degree oven for 30 minutes basting with sauce and turning pieces over as they brown (watching that the bbq sauce doesn't burn as it tends to at high heats).This was a great, inexpensive dish for my family -serve with a salad and lots of napkins (and the kids loved it)!Number of Servings: 6Recipe submitted by SparkPeople user APINKROSE.
