How to make Beef Gravy without the Drippings

The secret to a rich gravy is patiently whisking the flour until it turns a rich brown color.
  1. Start with the best beef stock/broth. I only use Kitchen Basics Beef Stock
  2. Heat stock
  3. Add butter to a large skillet and melt
  4. Sprinkle flour over melted butter, whisk together
  5. Continue whisking until the flour has become brown
  6. Whisk in warm stock

Ingredients

  • 4 cups beef broth or stock
  • ½ cup unsalted butter
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

Pour beef broth/stock into a medium saucepan and heat until warm. NOTE: You don't have to bring the broth/stock to a boil just until steamy and warm. In a large skillet melt the butter. Sprinkle the flour over the butter and whisk together. Continue cooking and whisking until the flour has become brown. Add warm broth/stock a ladle at a time to the flour mixture whisking as you go. TIP: Make the gravy thinner than you want because when the gravy cools it will thicken up. Or, if you're making the gravy ahead of time save some of the broth for when you reheat the gravy. Add salt and pepper.
