Featuring big, bold, and spicy Cajun flavors, this blackened chicken recipe is so delicious and super easy to make. It's called “blackened” chicken because the heavily browned outer crust made possibly by preheated hot skillet. Throwing skillet in the oven before cooking the chicken on the stovetop is key for the perfect char. Don't worry, your chicken will be perfectly juicy on the inside, too.

Ingredients

    boneless, skinless chicken breasts

  • 2 tsp.

    kosher salt

  • 1 1/2 tsp.

    garlic powder

  • 1 tsp.

    ground white pepper

  • 1 tsp.

    crushed red pepper flakes

  • 1 tsp.

    chili powder 

  • 1 tsp.

    dried oregano

  • 1 tsp.

    smoked paprika

  • 4 Tbsp.

    unsalted butter

  • Lemon slices, optional 

Directions

    1. Step 1Preheat the oven to 350°. Place a large (at least 10") cast-iron skillet into the oven to preheat. 
    2. Step 2Cut each chicken breast in half lengthwise to create two thin cutlets. 
    3. Step 3In a small bowl, combine all seasonings together and stir to combine. Season chicken breasts all over with seasoning mixture.
    4. Step 4Carefully take the skillet out of the oven and place onto the stovetop. Melt butter over medium-high heat. Once melted, sear chicken breasts on both sides, about 3 to 5 minutes each side. At this stage, you’re looking for chicken to get a nice char.
    5. Step 5Remove from heat and garnish with lemon slices, if desired. Place the skillet back into the oven to allow chicken to cook through completely, 5 to 7 minutes.
    6. Step 6Serve warm along with your favorite side dishes.
