Tempura is a popular Japanese restaurant dish that is frequently served. There are many varieties of tempura such as shrimp, fish or different kinds of vegetables. Crispy tempura is best enjoyed with a dipping sauce for battered food called Tetsuyu. It’s a savory sauce that complements and brings out the flavor of tempura.

In this post, we’re sharing a recipe for Tentsuyu, and some creative ways to enjoy this delicious sauce.
Ingredients You’ll Need
- Dashi powder: enhances the savory flavors
- Warm water: to mix with the dashi powder
- Soy sauce: to balance the salty and savory flavors
- Granulated sugar: adds sweetness
- Mirin: a sweet rice wine to complement the salty flavor of the soy sauce

How to Make Tempura Sauce
- Combine the dashi, soy sauce, mirin, and sugar in a small saucepan.
- Let the mixture simmer until the sugar is completely dissolved. Remove from the heat and set aside to cool before transferring the sauce to a mason jar.
- Warm the tempura dipping sauce and serve in a small bowl alongside your favorite tempura when ready to serve. If desired, grate the daikon radish and squeeze out the majority of the liquid. Add a small amount of daikon to the sauce.
Ways to Use Tempura Sauce?
The tempura dipping sauce is also delicious with:
- Vegetables – try it with broccoli, cauliflower, carrots, green beans, asparagus, sweet potatoes and more.
- Seafood – white fish, salmon, crab, squid, and shrimp are good options
- Sushi rolls – enjoy it with California shrimp rolls or your favorite sushi rolls.

How to Store Tempura Sauce
This tempura dipping sauce can be kept in the fridge for up to two weeks in an airtight container.
How to Make Dashi Soup
The tempura dipping sauce is typically made with dashi soup stock. However, because the stock can be difficult to find, instant dashi powder dissolved in water can be substituted.
