For "semolina" we mean durum wheat flour, while the generic term "flour" usually means soft wheat flour. The difference between semolina and flour is in practice represented by the type of wheat used.
Semolina is grainier than soft wheat flour which is very fine. From the grinding of durum wheat, semolina, wholemeal semolina and re-milled semolina are obtained.
The re-milled durum wheat semolina is obtained with an extra step in the milling phase, it is of finer graininess, lighter in color than the semolina, it is ideal for pizzas, focaccia and other leavened products.
The durum wheat semolina, in fact, is often used to "break" the salted leavened dough, in this way you will have a crispier pizza, and as a taste similar to that of pizzerias and ovens. This dough is perfect for platter pizzas or pan pizzas.
