How to Make Spam and Eggs

Here are the step-by-step instructions for how to make this spam and eggs recipe.

  1. In a small mixing bowl, mix the soy sauce and water until combined. Set aside
  1. In another mixing bowl, whisk the eggs with a pinch of salt and white pepper.
  1. Using a medium pan over medium heat, heat a tablespoon of oil until hot. Pour in the whisked eggs and use a rubber spatula to slowly and gently stir and fold the eggs on itself until the eggs just come together. Remove and set aside.

Expert Tips

  • How to make fried garlic. Mince 5-10 garlic cloves. Heat 1/4 cup vegetable oil in a small pot on medium-high heat until it reaches 350°F. Then add in the garlic and cook for about 1-2 minutes, stirring frequently until golden brown and crispy. Remove from heat and pour into a paper towel-lined bowl or tray to drain.

  • Sear the spam. You must sear the spam on each side to create a crispy crust. This will render down some of the fat in the spam and create a nice textural bite.
  • Use a rubber spatula for the soft scrambled eggs. The key to making the softest scrambled eggs is to watch the eggs closely. You have to stir with a rubber spatula when the eggs are still runny, but immediately stop when the eggs begin to curdle. When the eggs are slowly cooking, push the eggs together and fold them on top of each other to create fluffy layers.

Spam and eggs are best served immediately. You can store any leftovers in an airtight container in the refrigerator for up to 3-4 days.

Reheat: microwave covered until warm, or heat the spam and eggs separately in a nonstick pan over medium-low heat until warm.

Instructions

  • Make the glazing sauce. In a small mixing bowl, mix the soy sauce and water until combined. Set aside
  • Prepare the eggs. In a mixing bowl, whisk the eggs with salt and white pepper.
  • Scramble the eggs. Heat 1 tablespoon of oil in a medium pan over medium heat. Pour in the whisked eggs and use a rubber spatula to slowly and gently stir and fold the eggs into themselves until the eggs just come together. Stop stirring when the bottom of the eggs is just set and the top is wobbly and glossy. Remove and set aside.
  • Cook the Spam. Heat the same pan on medium heat until hot, then add the spam and sear each side until browned and crispy, about 1-2 minutes on each side.
  • Season the spam. Then sprinkle the sugar over the spam and toss to evenly coat. Add the soy sauce mixture and toss the spam to coat evenly. Simmer for about 3-4 minutes, stirring periodically or until the soy sauce thickens and glazes the spam.
  • Serve. Serve the spam and eggs over white rice. Top with the fried garlic, furikake, sesame seeds, and green onion.
