Sorry, but I’m not buying it. Where did you edit the name “Siri” or enter an alternate setting to activate “hey Siri”? There is no such user alterable setting anywhere in a default installion of iOS.
And depending on your speech or accent “hey sito” may just have been Apple’s machine language algorithm learning to recognize that you meant “hey Siri” when you say that. But that in no way means you actually changed the name of “Siri”.

Or stop using “Hey Siri” and manually activate it from the home button instead?

It seems some "S" names `will trigger Siri.
I can get Siri to react to Sarah, Sue, Susie, Sir, Surreptitious as well. If there is even a slight pause between "Sir" and whatever follows, Siri answers. I got her to answer to Sir Mixalot.
Sarah may lose this battle! What is her middle name?

You do realize this is the using iPhone forum, and there is no Apple menu in iOS, nor any “Systems Preferences“ menu for that matter. And under Settings -> General -> Accessibility there is nowhere to do what you’re talking about.
To my knowledge there is no way to do in iOS anything like what you are describing for OS X.

I am sorry. This popped on the question screen and I didn't see anything in the question about iOs vs. OS. My fault. On the iOS, yes Apple is still too smart to give people any control beyound the Idiot and Genius.

😁 I was editing it to correct my own mistake of thinking this was the iPad forum, instead of the iPhone. That and fixing some of the ever present ridiculous autocorrect induced spelling issues (Posting this from an iPad Air 2, and the autocorrect makes more errors and misspellings than I do).
No worries anyway - I just didn’t want the OP rushing to think they’d missed some setting or feature in iOS that would let them do what they wanted.

That is absolutely incorrect. It is possible to change Siri interaction and name. My Siri answers to "Paslushe Olga" meaning "Listen Olga" instead of "hey Siri" which is for barn dogs and *****.
even in English UK which I prefer to American.
Follow:
1. > System Preferences.
2. 4th tier from top: Accessability.
3. Left pane, 9th from top: Dictation.
4. Click button: Dictation Commands...
5. Left Pane> User >.. Click on the + at the bottom and create an <undefined command>
6. Click on <undefined command>
7. Fill in: When I say: Type a name, e.g. Olga
8. Perform: Choose... > Run Workflow > Other... > type "siri" in the search on top right. Choose Siri.app
9. Right Pane: Check mark: Enable the dictation keyword phrase: Type anything you want, e.g. Paslushe
Now you can say "Paslushe Olga" and Siri will pop up.
Note1: The only thing it cannot do is that if you ask: "What is your name?" she will respond as: "Мена зовуть? Siri. впрочем, это не новость." meaning "My Name? It is Siri. However that is not news."
In English, if you ask: "What is your name?" she will answer "My name is Siri, but you knew that already."
Note 2: You can make more commands so that you can say other names as well.

I figured that would end up being the only solution. But 'hey Siri' is a great feature to use when needed. And manually turning it on and off everyday whenever I leave or enter the office is not exactly a solution. So we'll just continue to laugh when all of our phone's Siris begin responding to conversation directed at Sarah.
Unless there is a way to deactivate Siri based on your location.....?

You wrong. I did change my Siri name to Sito after a long conversation. Now I can activate my siri by saying “Hey Sito” or “Hey Siri”. I have been trying to change it to Lulu but no luck. I don’t know how I did it, but mt siri answer me by Sito right now. And I’m happy with it because now I’m sure that only my iPhone will answer me. Unfortunately I couldn’t add a video here to show but the picture shows the new name.

I've suggested that as a solution. Sarah was not amused. 😁

Sorry, but there is no way to change the name of the virtual assistant “Siri”. That is the actual name of the patented and trademarked technology bundled into iOS.

unfortunately there isn’t way to change Siri's name. You may instead disable Hey Siri from the Siri settings
