To holster your weapon in Cyberpunk 2077, hold the triangle button when you're on foot. This will bring up the weapon wheel. To the four-'o'-clock position, select the red firearm with a line through it. This will put your weapon away.

Alternatively, you can quickly tap triangle twice to pop your weapon back into your backpack. It's important you do this because there are moments when you're exploring Night City where residents will have a negative reaction to your packing heat while walking about, and so if you want to avoid unnecessary firefights, then you'll want to put your weapons away.
