Yeast is a vital ingredient in many recipes, including pizza dough, cinnamon rolls, bread etc. It is because of yeast that the dough rises and results in a pillow-like soft bread. It is easily available in the market as instant or active dry yeast — a light brown powder. It is the dry yeast that causes the dough to rise and result in larger, softer, and fluffier baked items. Double-Acting Baking powder
It is the most common variety of baking powder sold in grocery stores and helps bread rise twice: during the mixing phase and the baking phase. It contains baking soda and an acid, usually cream of tartar. Unlike when using yeast, using baking powder does not require additional rise time. For this reason, it is used to leaven quick types of bread like pancakes, biscuits, and cakes. In baked goods, you can replace yeast with an equal amount of baking powder.

Baking Soda
Baking soda, like yeast, is a leavening agent. It helps breads rise and gives them their light and airy texture. Unlike yeast, baking soda needs an acid to activate it. By adding an acid to baking soda (lemon juice or cream of tartar) a chemical reaction occurs that produces carbon dioxide and fills your bread with air. You can substitute yeast with equal parts of lemon juice and baking soda. So if a recipe requires 1 teaspoon of yeast, you can use half a teaspoon of lemon juice and half a teaspoon of baking soda.

Sourdough starter contains naturally occurring yeast. It is made from flour and water and used to make sourdough bread, which boasts a slightly tangy flavour from the natural fermentation process of the yeast. Fermentation by a sourdough starter works in the same way as instant yeast, forming bubbles of carbon dioxide in the dough to make it rise. You can use 1 cup of sourdough starter to replace one 2-teaspoon package of yeast.
