Without it you could use all the same ingrediants but it wouldn’t seem right. Well Asafoetida smells like death, literally like a rotten corpse. Strong smelling foods can stink up an entire floor and it is unprofessional. The main problem with Indian food is that the smell doesn’t dissipate. My wife’s company employs many Indians and had to ban food from people’s desks because of them. Then they had to ban it from small lunchroom because the smell would go through the offices where execs had clients. So now they can only eat in the building cafeteria, which has no Indian food. They also had had have meeting about using deodorant, as it’s a cultural thing in the U.S to smell clean lmao.Only Here for Attachments

There was a motel/restaurant that Indians bought in town that the health department condemned because they thought there were dead animals in the walls. It was torn down. They bought another hotel/restaurant that went bankrupt because nobody would stay there. The new owner tore everything out inside and remodeled it. It took almost two years to reopen it.

But that’s because you basically have to gut it to get the smell of curry out. My buddy tore out every wall and carpet. After 6 months he had to do new flooring as well because the funk was still there. It’s funny because there are still closets that stink. He said he would never do it again.Which Doctor

Curry leaves should have a stronger smell than devil's dung unless you're cooking some really "gamey" lamb/goat/mutton.
