  • 2 tablespoons butter
  • 2 bananas, sliced
  • 1 cup light brown sugar
  • 1 teaspoon vanilla
  • 1⁄2 teaspoon cinnamon
  • 1 pinch salt
  • 2 scoops ice cream (vanilla or something more exotic like praline or wattleseed)

directions

  • Melt butter in a saucepan over medium heat.
  • Add sliced bananas and stir for 2 minutes.
  • Add brown sugar, vanilla, cinnamon, and salt.
  • Lower heat and continue cooking, stirring constantly for 2 more minutes.
  • Serve over a scoops of ice cream.
  • Note: 1 oz of booze may be added during the last 2 minutes of cooking (Rum works well), add with the pan off of the heat- Beware of flaming.

  2. I followed your recipe to a tee sans alcohol. What I did add, however was two tablespoons of a high grade balsamic vinegar. I love the flavour of caramelised balsamic vinegar. When I poured the sauce and bananas onto the ice cream within a minute the sauce was the consistency of the top of a crème brûlée. Not good. What happened?   3. This recipe has great bones, but do yourself a favor and cut the brown sugar in half or you might have a problem with the sugar getting hard when poured over ice cream. I also cut the cinnamon in half...and of course added 1-1.5 ounces of rum and set it on fire- flambé!   5. I wanted something sweet and yummy! This easy little recipe was the answer... I did not have ice cream so served it over plain yogurt... not as good as serving with ice cream, but it satisfied my sweet craving!
