Beef Au Jus Gravy is perfect for a French Dip sandwich or to accompany roasted meat like Prime Rib of Beef. It can also be thickened to make beef gravy. To make this from scratch you would need to roast some beef bones and gather the pan drippings.
Sometimes this isn’t feasible as with French dip sandwiches, or you wouldn’t have enough drippings from your beef prime rib to serve your guests at dinner. That’s when this shortcut version comes in handy.
In this recipe, we are using ingredients that are gluten-free. The thing about gluten-free is that all brands are not created equally so as always you have to be diligent in reading the nutrition labels.

Homemade Beef Au Jus Ingredients and Tools:
Ingredients:
- Beef Stock – I start with unsalted Beef cooking stock. If I do not have homemade stock, I use Swanson brand.
- Beef paste – I use Better Than Bouillon brand which is MSG& Gluten-Free. EDIT: Better-than-Bouillon is no longer printing gluten-free claims on their packaging labels. Be sure to read the product labels if you are concerned with gluten-free.
- Worcestershire sauce – I use Lea and Perrins because I prefer the flavor, it is also gluten-free.
- Salt and Pepper, to taste after the sauce has been combined so as to not over-salt the sauce.
Tools:
- Saucepan [paid link]
- Whisk [paid link]

How to Make Beef Au Jus From Scratch:
- In a medium saucepan [paid link] bring Beef Stock to a boil. Reduce heat to medium-low and whisk [paid link] in the beef base, Worcestershire sauce, garlic, salt, and pepper.
- Add in strained pan drippings without the fat (if also preparing a roast).
- For gravy, thicken with cornstarch.
How to Serve Beef Au Jus:
We serve this beef au jus recipe most often as an accompaniment to our Prime Rib dinner. But this has many other purposes. like French Dip Sandwiches!
The best French Dip Sandwiches are made from the leftover prime rib or roast beef. We actually use this au jus as the base of many other beef gravies and it’s excellent served this way over meatballs or mashed potatoes.

Beef Au Jus FAQs:
How much is a portion?
This recipe yield three cups of au jus which is about 12 servings for prime rib. For this reason, the nutritional label attached to the recipe care is calculated against 12 servings.

Store leftovers in an air-tight container in the refrigerator for up to four days.

Rehat leftovers in a saucepan [paid link] over medium heat.

Thank you, Becky. That is very kind. I am so glad you and your family enjoyed it. Many people cannot have alcohol, so it’s always nice to have an alternative.

For those GF looking to replace the boullion I have had success reducing a can of beef broth to about 1/4 cup or less then add the rest of the broth It intensifies flavor without gluten!!

Wife just had chemo, searching for something appetizing. Your easy Au Jus recipe with thin sliced beef and crisp rolls was just the ticket.

Hi Dennis, I do hope she enjoyed it. It’s hard on chemo to feel like eating, so anything she finds palatable is an absolute must. My dad had throat cancer and has also undergone chemo, this is a go-to recipe for us (almost daily) to help him eat solid foods.

Au jus means literally with the juices – but there’s not always enough in the pan after roasting – so this was the perfect way to extend the pan drippings to accommodate everyone at the dinner table.
