You can cook these fire roasted tomatoes on your grill super fast. Then use them for marinara, vodka blush sauce, or salsa. The possibilities are endless. The depth of flavour is beyond compare.

I cannot even begin to describe how good tomatoes are when cooked like this. Yes, you can easily buy a can of fire roasted tomatoes but then you don’t get to play with fire yourself. Where’s the fun it that?

Fire roasting tomatoes is incredibly easy to do. Once you try this out you will never want to buy them again. The taste is just superior to anything you can buy in a can.

You can flavour them up with some spice. You can add fancy olive oils if you’re *that* kind of person. Or you can just grill them as nature intended. That’s what I did. Why mess with perfection.

If you love tomatoes, I can envision you eating these bad boys right off the grill. I’m picturing you grabbing one of the grill, tossing it around like a game of hot potato, then biting into it as the tomato juice gets all over your clothes. You won’t care. These things are that good.

I’d highly recommend NOT grabbing a hot one off the grill and biting right into it though. You need to slow down there buddy, a little whoa nellie is in order.

Honestly, you will become addicted to fire roasting tomatoes once you try them. I am using them in everything these days.

How to Make Fire Roasted Tomatoes

  1. First of all, clean your grill grates.
  2. Then brush the grill grates with oil.
  3. Next, fire up the grill. You want to preheat your grill just like an oven.
  4. Clean your tomatoes then pat them dry.
  5. Brush olive oil on the tomatoes.
  6. Then place the tomatoes on the preheated grill.
  7. Cook for a few minutes on each side. It’s important to turn them occasionally so all sides char perfectly.
  8. Next, remove tomatoes from grill. Turn the grill off.
  9. Then cover the bowl of tomatoes and allow to cool for a bit.
  10. Finally, you can remove skins or not, up to you.
  11. You can serve or preserve. Or make some other great recipes with them!

Grilling Tips

  • Always be sure to clean your grates every time you use the grill.
  • Use a grilling brush or lint free cloth to wipe oil over the grates before cooking.
  • Remember to keep a close eye on your grill at all times. Things can go from delicious to burnt in not time. Plus flare ups can happen.
  • Do not  lift the lid constantly. Heat escapes that way and affects the temperature. Just the same as when you open your oven door!
  • Remember to use firm tomatoes.  If they are too soft or you will have mush on your grill. Chose wisely my friends.

  • Salt
  • Pepper
  • Garlic

  • Oregano
  • Basil
  • Italian Seasoning

Other tomatoes can be used for this recipe. If using roma, cherry or any type of smaller tomato you can use a grill mat or a grill basket so the tomatoes don’t fall through the grates.

Ingredients

  • 12 tomatoes
  • 1/2 cup olive oil

Instructions

  • Wipe down your grates with olive oil before turning on. I use a cloth or a brush.
  • Get your grill fired up.
  • Let it get hot. I always preheat my grill just like my oven.
  • Turn it down to a medium heat.
  • Brush your clean tomatoes with some olive oil. If you don't want to do this step you can roast them without oil. I've done them both ways. Both are good.
  • Place your tomatoes on the grill. I did this batch whole. No need to cut in half.
  • Let them cook for about 5 to 9 minutes depending on the size and ripeness of your tomatoes.
  • Once they develop char you want to use long handled tongs to flip these suckers over.
  • Cook for another 5 to 9 minutes, depending on your tomatoes.
  • Once they develop beautiful char on them take them off the grill and place them in a large bowl or casserole dish.
  • Turn off your grill.
  • Now cover the bowl or casserole dish with either tinfoil (my preference) or plastic wrap (I freaking hate plastic wrap with a passion) and allow the temperature of the tomatoes to come down. Covering them will help you remove the skins easily once they cool.
  • Once the tomatoes cool you need to remove the blackened skins. It's easy and quick, trust me.
  • Throw away the skins.
  • You are now left with beautiful fire roasted tomatoes!
  • Cut them up into chunky pieces, and make sure you keep the juices from the bowl and from the cutting process. Those juices are amazeballs in sauces.
  • You can either get crack-a-lacking on some amazing sauce or you can transfer to a container to either refrigerate or freeze for use later. Make sure you pop in some juice, that's the good stuff so do not waste it.
  • You can do anything with these fire roasted tomatoes. Make a pasta sauce, marinara, blush sauce, salsa, chili or soup.
