This steak and potatoes recipe is another delicious option! The one pan wonder meal includes tender and juicy garlic butter steak bites with crispy potatoes and broccoli florets. Everything is drizzled with melted garlic butter sauce. Absolute yum!

This recipe only takes 35 minutes to make, so it’s great for busy weeknights. But because it’s steak, it’s equally perfect for a special occasion or if you’re having dinner guests.
If you love a good steak dinner, but you don’t love all the work it typically involves, this recipe is for you!
This easy main course is much more affordable than a restaurant steak, too. Especially considering you can use less expensive cuts like flank steak to make juicy steak bites!

Here are my most important mom tested cooking tips for making garlic steak bites! I’ve made this countless times, saving you from a failed attempt.
- To help create a good sear, pat the meat dry with paper towels before seasoning it.
- Start with a hot skillet. It will give you that beautiful crust on the outside of each bite-size piece while keeping the inside juicy and tender.
- Use oil, not butter when you sear steak. Butter will burn at the high temperature needed to sear the steak.
- For extra flavor, use marinated steak, or marinate it yourself before using it in this recipe! Many of these pork chop marinades work perfectly for steak.
- Reduce the burner heat to medium-low before making the garlic butter sauce. This prevents the garlic from burning.

Ingredient Notes and Substitutions
You only need a handful of ingredients to make this steak bites recipe!

- sirloin steak – In my opinion, sirloin is the best steak to use for steak bites and potatoes. It only requires a quick, hot sear and will remain tender and delicious. But you can use ribeye steak or even flank steak.
- garlic – Feel free to adjust the amount used in this recipe to your tastes.I always keep frozen garlic on hand to save on prep time, and it works beautifully in this recipe.
- avocado oil or olive oil High smoke point oils are best for high heat cooking.
- baby yellow potatoes are my favorite, but baby reds or any small potato with thin skin will be perfect.
- broccoli – Fresh or frozen broccoli will work in this recipe.
Recipe Variations
If you’d like to make this dish lower in carbs, substitute the potatoes with a vegetable like mushrooms, cauliflower, zucchini, or sliced onions. Or, skip the taters and opt for a delicious steakhouse side dish like gluten-free mac and cheese or Longhorn steakhouse rice.
How to Make Steak Bites and Potatoes

Jump to Recipe- Cut the broccoli and potatoes into bite size pieces. Then, mince the garlic and parsley.

- Pat the beef dry on all sides with a few paper towels. Don’t skip this step – it’s important that the steak is dry so you can get a good sear and color on each piece! Season the beef lightly with salt and pepper, then cut it into bite-size pieces.

- Cook the vegetables. Heat avocado oil in a large cast iron skillet over medium heat. Set the potatoes in the skillet with the cut side down. Allow them to cook for 8 minutes, or until the cut side begins to get crispy and easily releases from the skillet.
- Flip the potatoes and then add the broccoli. Cook all veggies together for another 7-8 minutes, or until the potatoes are cooked through and the broccoli is softened, then transfer everything to a large plate.

Cook the Garlic Steak Bites
- Sear the sirloin in oil over medium high heat. It’s important to wait until the oil is shimmering, then add the sirloin pieces. Otherwise, the oil will absorb into the meat.
- Test for doneness with a meat thermometer. For medium-cooked steak, the internal temperature should be 145°F (63°C).
- Make the garlic butter sauce. Using the same large skillet, reduce the heat to low. Add the remaining oil, butter, and garlic to the skillet and sauté for a couple of minutes.
- Return the broccoli, steak bites and potatoes to the skillet. Stir or use tongs to turn the meat and vegetables over so they get a nice coating of the garlic butter.

Make it kid friendly: If your kiddo isn’t a fan of broccoli, you may only want steak bites and potatoes in your meal, and that’s fine! Including a veggie just makes this a complete, all-in-one meal. Maybe use carrots instead!

Ingredients
1x2x3x- ▢ 12 ounces sirloin steak , NY strip, or ribeye
- ▢ 3 cloves garlic
- ▢ ¾ pound baby gold potatoes about 6 baby potatoes
- ▢ 2 cups broccoli florets
- ▢ 6 tablespoons avocado oil divided
- ▢ 3 tablespoons butter
- ▢ ½ teaspoon sea salt or more/less, as desired
- ▢ ½ teaspoon black pepper or more/less, as desired
Instructions
- Prep: Slice the potatoes in half and cut the broccoli into bite sized pieces. Mince the garlic and parsley. Cut the steaks into 2 inch pieces and pat them dry on all sides with a few paper towels to dry the pieces. Season lightly with salt and pepper.
- Cook the vegetables: Heat 2-3 tablespoons of oil in a large cast iron skillet over medium heat. Set the potatoes in the skillet, cut side down. Cook for about 7-8 minutes, or until the cut side begins to get crispy and will easily release from the skillet.Flip the potatoes and add the broccoli. Cook together for another 7-8 minutes, or until the potatoes are cooked through and the broccoli is softened. Transfer everything to a large plate.
- Cook the steak: Heat 2 tablespoons of oil in the same skillet over medium high heat. Once the oil is shimmering, add the steak. Sear the steak for about one minute per side, turning the pieces as soon as they begin to brown, then set the steak aside on the same plate as the vegetables.
- Make the garlic butter sauce: Lower the heat. Add the garlic, remaining 2 tablespoons of oil, and butter to the skillet. Saute over low heat until the garlic is fragrant, about 3-4 minutes.
- Finishing steps: Add the steak and vegetables back into the skillet, turning to fully coat the steak and vegetables in the butter and garlic. Sprinkle with parsley and season lightly with salt and pepper. Serve immediately!
Notes
- You can substitute the sirloin steak with another cut of steak of your choice. NY strip and ribeye are good options.

While this one skillet meal is a great choice to serve all on its own, you can also make some fun side dishes to serve alongside it! Make some air fryer baby carrots or roasted root vegetables.
