Start With Some Greek Apps

If you are going to have a Greek feast, you need some tasty Greek appetizers! Two of my favorites are Spinach Feta Fillo Triangles (Spanakopita) and Baba Ghanoush. Either (or both) of these vegetable-packed nibbles will get any Greek themed menu off to great start. On one hand we have smokey, roasted eggplant pureed into a smooth dip – great with Homemade Pita Bread – and, on the other, we have packets of feta and spinach wrapped into layers of fillo.

As with many of my party ideas, these can both be made ahead, which I think makes them even better. The Baba Ghanoush can be made the day before and then brought to room temperature before serving and the Fillo Triangles can be popped into the freezer once you’ve assembled them so all you need to do is bake them the day of.

At this point you can mix up a cocktail or make some watermelon lemonade for a refreshing kid-friendly choice or open up a bottle of wine. I like to match my wine to my food, so I would try a Greek bottle, but you really can’t go wrong with a good Red Zinfandel or Shiraz as well.

Time for the Main Course and a Couple of Sides

For the main course I, of course, picked lamb! Specifically Butterflied Grilled Lamb, which is both yummy and quick to cook. It’s also what I’m going to be having for Easter dinner, since my parents really love it! 🙂 While I do have a slow roasted lamb leg (which is so tasty!) that I would recommend if your Easter is cold and damp, I’m going to be optimistic and hope you have clear, warm weather and can fire up the grill.

And then for sides, I have Roasted Asparagus and a Spring Greek Snap Pea Salad. The salad is a new recipe here and one which takes advantage of fresh, spring vegetables to make for a nice twist on the classic Greek salad. As for the asparagus, it is an Italian recipe and is drizzled with balsamic, but I couldn’t resist serving asparagus for Easter and the flavors do go very nicely with the rest of the meal. If you made pita bread, you can serve that with the meal, or how about making some roasted potatoes with the roasted asparagus?

A Sweet Ending

All holiday meals need a sweet treat to finish things off and you can’t go wrong with this Chocolate Baklava! I always think baklava is the perfect end to a Greek meal. Add chocolate? And I think it’s even better! But then I think everything is better with chocolate. 🙂

Got Leftovers?

One thing that’s great about having some leftover lamb is that there are so many tasty recipes you can make with it which will completely transform the lamb into something new. I have a comforting Leftover Lamb Moussaka for a day when you have some time to putter in the kitchen and a zesty, quick Leftover Lamb Gyro for days when you don’t. Two great ways to enjoy your lamb all over again!
