I can't believe I'm asking such a basic question but it really shouldn't be that hard to figure out from using the software, and yet I can't figure it out. It really shouldn't be this hard. I found one tutorial here but the UI was completely different and I could not find matching settings in the actual program. I guess that's a problem with open source? Nobody is actually thinking about usability and intuitiveness?

Your videos are automatically saved when you stream or record and are saved in the default video folder. You can open whatever folder they're saved in by Selecting File, Show Recordings. L

Correction - video file saved locally when you Record. Streaming does NOT create a local video file for later usage By default, OBS will record to the MKV format, as an interruption in the recording process won't ruin the entire file (as would happen if recording to MP4). If your computer is not setup to view MKV files, there are easy codecs to install to enable such, or use OBS' feature to remux the MKV file to MP4 or other container format (for me, remuxing a 11GB MKV file on a NVMe drive takes about 20 seconds).
