Jim Morgan J got some for Christmas, the Hickory Farms variety. They don't need to be refrigerated until after you open them. After that they start downhill pretty quick. Jack Links. Was perfectly fine. I've eaten them two years past the date and they were soft, but still just fine. They seem to go soft pretty much every time after a year and a half or so, but the curing works just perfectly. When opening one, the open ends on the wrap, the ends will look a bit brown but give it a good smell and taste a small taste. Your nose and your palate will tell you it's bad long before it's bad enough to make you sick. If it's not stinky and it doesn't taste "brown" (you'll know what I mean the sec you try something that's bad), even if it's gone soft, it's not going to kill you. The cheeses in those assortments, on the other hand, lose all taste and go to a hard, waxy consistency with age. They're still perfectly fine to eat, though. #14 · Jan 2, 2015 That's been my experience as well, just going a little soft with age. The summer sausage does the same... 0 Reply #13 · Dec 30, 2014 They will last for awhile.. but best to keep them cool and dark. I bought one for a co worker, and forgot it on my kitchen for about a week in the hot summer. When I remembered it and gave it to him it felt kind of soft. The next day he asked how old it was, and then he showed it to me. What should have been a nice meaty sausage was now kind of gray and almost purple-ish. It didn't smell too good either. He must have not thought it too bad though, since he ate probably a 1/4 of it. I'm just glad he didn't get sick from it! #15 · Jan 5, 2015 I ate one in November chunked up thrown in my ramen, was from last christmas. I did it to test as travel food. It was gross and turned my stomach. The fat was beginning to go rancid the sausage was starting to lose texture. I stored it in my room temperture pantry. It was Hickory Farms. It doesn't work as a go food you can rotate every christmas. #16 · Jan 6, 2015 Man, I love a good summer sausage. With some cheese and some good crackers. If I ain't carful ill eat my weight in em. As far as shelf life, they are usually good for about a year. It all depends on how you keep em. I have seen them stored in a dry and dark basement for two years and they were fine. Seen them frozen last for 5 years. But if you keep them in the light, with changing temps they will be good for about a year. #17 · Jan 6, 2015 I buy them by the dozen whenever I see a sale and they aren't already soft in the store. I picked up quite a few just a few days back. Got to love after Christmas sales. But those, along with the big ones the family always gives me for Christmas, will be used in the next year. I buy a lot of them but I only buy to use, not to really store anymore. If you plan to store them, freeze them. I've got another dozen or so of the Jack Links brand in the basement. If I ever stop posting, you'll know I got into a bad one. ;) #18 · Sep 19, 2022 Im eating a small summer sausage i found in the back of my gmas fridge right now. Smells fine. tastes good enough.
