Your estimated delivery date is the best estimate you will see of when you should expect your product.

I mainly saw it on this forum so I assumed that was the norm for most apple products preparing to ship was 1-2 business days. And Apple said somewhere that card is charged once the product is shipped or being shipped.

Your card is charged once your order enters “Preparing for Shipment”. At that point, it can no longer be canceled online.
