Need to know this asap because I"m making icing now. The directions say 2lb bag of confectioners sugar. I have a 7 lb bag so I need to know how many cups is equivalent to 2 lbs.

If you don't have a kitchen scale, one pound is approximately 4 cups of sugar, so you need about 8 cups.

I would actually suggest using a kitchen scale to measure it. If it says 2 lbs, you should use 2 lbs -not 8 cups. There is actually a difference when you measure out a 8 cups vs 2 lbs of confectioners sugar. (Been there, done that) I have previously weighed the difference between 4 cups vs 1 lb, and while the difference is minimal it can cause a difference in texture -depending on the type of frosting you are making. From measuring out 8 cups of confectioners sugar, and then weighing it, the total weight was 1lbs 14 3/8oz -(860 grams) So that means if you only use 8 cups, you will be 1 5/8 oz shy of 2 lbs.

I have a 2lb bag of sugar that says it contains 7.5 cups or powder sugar. I agree the best way is to weight it because then you will be using the same amount of powder sugar every time, so you will have the same consistancy every time. This is why I haven't looked into buy powder sugar in bulk. I don't want to measure it, so I just use the 2lb bag and 1lb box. icon_biggrin.gif

Ok, I'm really confused, but forgive my ignorance since I'm a newbie.I thought 1 cup =8 oz, so 2 cups = 16 oz = 1 lb?Is that for liquids only? How do you get 7.5 cups = 2 lbs of powdered sugar?Again, forgive my ignorance.

If you sift your PS then measure out 8 cups that's 8 cups. Don't worry about it, It is enough~ No matter what kind of PS I use I always sift it first then measure it. I always measure 8 cups. Perfect BC everytime~ thumbs_up.gif

Fourangelsmommie - you are correct, that scale is for liquids only. So there will be a difference in weight as confectioner sugar is a dry ingredient. Personally this is one reason why I prefer the metric system.
