Plus, it's an interesting enough sea food, that is surprisingly rather easy to cook. So, if you have no allergies and a taste for shellfish, here is how you can buy yourself some crabs and clean them thoroughly before you can cook them any way you want. Choosing the crab While getting a live catch is tricky in Mumbai unless you're hitting the wholesale market at Sasoon docks, or going to the local beach early in the morning when fishermen return with their catch. However, if you're buying the one's not alive from the local market, make sure to check the teeth near the pincers. If they are worn out, you might not get enough meat out of the crab. So, look for crabs with sharp, big teeth on starting of their claws. Also, if the shell is shiny and not marked or dull, it means it will have more meat. This is done because crabs with sharper teeth on the claws have freshly molted (shed their old shell for new) and they tend to have more flesh then. Another important tip is to buy crabs that are stored out of water. Reason being, crabs that are stored inside water are rather active and lose their energy stores which causes their flesh to shrink. Crabs can survive out of water if their gills are wet, so make sure you buy those stored out of water. Cleaning 1. Turn the crab and lift its apron like tail and break it. 2. Stick your thumb in the hole left in the apron and pull out the carapace. It will come apart showing the guts and gills of the crab. You can clean and preserve the carapace to serve the scooped out crab meat. 3. Under running water, take out the guts with your finger. You can also pull out the gills with your hands, leaving aside white or pink flesh, depending on the type of crab you got. 4. Take apart the bigger claws. and crack them with a big spoon or a ladle. This will make it easy for you to reach the meat once its cooked. 5. With a strong pair of scissors, cut the abdomen with the meat along the middle.
