To clean a trout, start by slitting it from the anus to the throat with a knife. Then, use the knife to separate the gills from the head, and open up the body. Next, pull out all of the trout's guts, and scrape the kidney away from the backbone. Once you've done that, cut off the trout's head and fins and discard them.
