How long does it take T bone steak to cook in the oven?
Not long! If you like your meat medium-rare, your T-bone steak should be ready in just about ~15-17 minutes.
What temperature are T-bone steaks done?
For rare, 125 degrees F; for medium rare, 130 degrees F. If you prefer well done t bone, well I’d probably just make homemade hamburger patties or something else with ground beef because this is a really nice cut of meat you don’t want to overcook!
What’s the difference between porterhouse steak vs t bone?
They’re pretty similar, but t-bone steak has a smaller tenderloin piece.
How to cook t bone steak in oven without skillet?
When we were Air BNB-ing when moving to Dallas, we were “roughing it” without any of our kitchen essentials, like our trusty cast iron skillet. So pan searing t bone steak in a skillet over high heat wasn’t an option unless we wanted to use a non-stick pan. We didn’t. Luckily, you can cook steak without a skillet, when needed. We figured out how to cook a T-bone steak in the oven without searing it first. Instead of baking t bone in the oven, we broiled it to get that nice crust on the outside and perfectly cooked pink center. To do this in your home, add a seasoned and oiled t-bone on a rimmed baking sheet, on the top rack of the oven (within 6 inches is ideal). Broil t-bone steaks for ~5 minutes or until a brown crust forms, flip it, then broil thick t-bone for about 5 minutes more (or 3-4 minutes if cooking thin t bone steak). Until you reach the perfect t-bone doneness temperature for your liking. Rest it and enjoy.
How should I serve my T Bone Steak? What are good sides?
Serve this T-bone steak with sous vide little potatoes or roasted beets with goat cheese and a simple strawberry feta salad for a special date night meal. If you’re cooking it for a larger crowd or Sunday dinner, go a little bigger and whip up this spinach pesto lasagna or baked rigatoni on the side.

Now I’ll walk you through whipping up this steak dinner at home…

Detailed recipe steps
- Set out steak on a cutting board. While preparing ingredients for the steak (about 15 minutes before cooking this t bone steak recipe), remove steak from the fridge. This will help bring it closer to room temperature.
- Preheat the oven to 400 degrees F.
- Add seasonings for t-bones. Pat t bone steaks dry with a paper towel and season them all over (don’t forget the sides!) with steak rub or steak seasonings of your choice.
- Prep a hot, oiled skillet. Add a large cast iron skillet to a burner on medium-high heat. Add olive oil. Once you have a nice, hot skillet (it will slightly start to smoke – turn on the oven fan for this recipe!), then you’re ready to add the t-bone steaks to the hot oil (stand back!).
- Sear the steaks. Place both T-bone steaks in the cast iron pan and sear both sides for 2 minutes on each large, flat side. Next, sear the edges, what my husband calls the “fat sides” for 30 seconds. This is just to brown them with a little pan seared crust.
- Cook t bone in oven. After the sear, move the cast iron pan into the preheated oven and cook for 5-7 minutes, flipping once halfway through until the internal temperature is about 5-10 degrees below your desired temperature. (In the Sip Bite Go video demonstration, we removed the steaks from the oven when they reached 135 degrees F for med-rare to medium t bone steaks.)
- Rest t bone steaks. Remove cooked steaks from the oven and place them on a cutting board to rest for at least 10 minutes. During this time I recommend topping T-Bone steaks with the butter so it melts in and provides a little more flavor and juice.
- Garnish steaks and enjoy. Cut the steaks off the bone, then in slices (see my guide to cutting t bone steak), or serve in a full piece. Top them with anything you’d like, such as fresh chopped Italian parsley, fresh cracked salt and pepper, or recommended steak sauces in the notes.

YUM – I suggest whipping up a t bone steak sauce like this creamy peppercorn sauce, jalapeno ranch dressing, or garlic herb compound butter made with fresh rosemary.

How do you slice t bone steak for serving?
First, cut out the bone in the center. Then, slice perpendicular or horizontally from the bone. To get fancy with the plating, you can slice the steak but leave it in the original shape.

T bone steak temperature chart
Wondering how to know when t bone steak is done? With a meat thermometer, you can check easily if the meat is cooked to your preferred level of done-ness.
Rare? Med-rare? Well done (eh! Really?! Womp womp…) – I got you…

- Rare t-bone (125-130°F) is still red inside.
- Medium rare t bone (130-140°F) is red to pink inside.
- Medium t bone (140-150°F) is mostly pink.
- Medium well (150-160°F) has just a slight bit of pink inside.
- Well cooked (160°F) has no red or pink inside. Whoever cooks the steak this well done is crazy and should instead make my crockpot meatballs.
Pro tip: One of my go-to tricks for perfectly cooked food every time is using the right BBQ meat thermometers.
