How easy it is to cut Gouda depends on how long it has been aged. Gouda cheese is aged anywhere from several weeks to several years before it is sold. Fresh Gouda is softer and can be cut using a wire cheese slicer. Gouda that has aged for a long time needs a sharp knife. Named after the city in the Netherlands where it originated, Gouda is a yellow cheese made from cow's milk. It tends to be mild and works well in sandwiches or on cheese platters.
