Your Horse will lose health and stamina faster if you do not keep it clean with the Horse Brush. You can get a free Horse Brush in the Chapter 2 mission: Exit Pursued by a Bruised Ego. The Horse Brush will be given to you by the Stable owner upon purchasing a horse from him -- this is all part of the mission, so go to the Exit Pursued by a Bruised Ego if you are having problems.

How to Brush Your Horse

Hold left on the D-Pad while targeting your horse while riding or standing beside the horse to brush it. Keep tapping to brush several times until you see the grime disappear from the horse, and check your horse's attributes to make sure its healthy once again. A white horse, like the best horse in RDR2, the elite Arabian, will show dirt much more clearly than a dark horse.
