It has deposits all over the top, and all over the inside of it. You have to give them a bit of time to regenerate. If you get the scanner room it helps with your search. They are found in the Sea Treaders' Path south-southweatof the lifepod. More specifically you want to look for a basin at the foot of the Sea Treaders' Path that leads into the Grand Reef because that is where you will usially find them. And, yes, the outcrops they dig up have up to a 80% chance of giving you copper. You can find about a dozen copper ore within minutes that way.
