The pan cover will ensure that the top of the omelette cooks.  If your lid is see-through, you can watch the omelette cook through it.  Check your omelette after 2 minutes to see if the top is ready.  Do not overcook!  I cook it until there is no runny glop of top.

I’ve never seen anyone else covering their omelettes while cooking, but this method works really well for me.  The omelette is tender, not overcooked and doesn’t get ripped.

On the top picture, it’s a 6-egg omelette in a 12-inch frying pan.  Good luck flipping that one :)

Yes, I know about the method of pushing the cooked portion of the eggs to the middle and getting the runny eggs to go to the side.  For some reason, it never works for me – I end up with the overcooked bottom, and the runny top of the omelette.

So if you are like me, try my method of covering the eggs, and you’ll finally make a great omelette.

  12. Definitely didn’t work for me. Egg wasn’t at all cooked after two minutes, so I turned up the heat to medium-low for another two minutes. Still wasn’t cooked after another two minutes, so turned to medium and left it another two minutes. STILL not cooked after that so I looked on the bottom and it was completely burnt. Used 7 eggs instead of 6, but that shouldn’t have made that much of a difference.

    Sorry it didn’t work for you. Did you use a 12-inch pan?

    I think the problem was in turning the heat up to medium. Medium heat burns the bottom. If it’s not cooked after a couple of minutes, please continue cooking on Low until the eggs are almost set. Might take another 3-4 minutes, I’m sure it depends on your stove. I have a large 12-inch electric burner, so maybe it works so well just on my particular setup :)

  18. Add a small splash of water at the edge lift up on edge so water does not get on top but goes on the pan then cover the steam created cooks the top this works with cooking regular fried eggs also.
