Roasting Bananas
How do you ripen bananas quickly?
You can slow roast bananas in the oven until they are ripe enough to use in a recipe (it only takes about 30 minutes). And once they’ve cooled, you can also freeze them for smoothies (because smoothies are better with ripe bananas!).
Simply bake bananas in an even layer on a baking sheet at 300ºF for 25-30 minutes. They should be black and feel soft.
Let them cool completely before use, and that’s it!

Instructions
- Preheat oven to 300ºF.
- Layer bananas on a cookie sheet.
- Bake for 30 minutes*. Let cool to room temperature or in the refrigerator before baking with or freezing.
Notes
- This recipe in NOT for ripening bananas to eat them raw.
- I don’t recommend attempting this with completely green, unripe bananas. They won’t have developed enough sugars and flavor be useful in baked goods, even after baking.
