You've already made fresh pasta thanks to our easy guide? Now follow these three simple steps for keeping your fresh pasta...fresh!

1. Portion your pasta

Once you’ve finished making the pasta, dust it with flour so that it doesn’t stick. But use it sparingly—too much flour will interfere with the taste. Divide the pasta into portions to make it easier to work with for future meals. Shape long pasta into nests and let dry for a half hour.

2. Freeze it

The best place to store fresh pasta is in an airtight container in the freezer. If you put it in the refrigerator, the humidity may alter its flavour and texture, and encourage the growth of bacteria… no thanks!

3. Cook it at a rolling boil

When you’re ready to cook your pasta, take it directly from the freezer and drop it into a pot of salted boiling water. Remember that it’s important to put a lot of water in the pot and a lot of salt in the water. There’s no need to defrost the pasta beforehand. Stir the pot to prevent the strands from sticking. In just a few minutes, you’ll have perfect al dente pasta.

Mix the pasta with your favourite sauce, add veggies and sprinkle with grated Parmesan for a comforting, delectable dish.
