How to Tame Bees
Use Leads and Flowers to Make a Bee Follow The Player

While you cannot actually tame Bees, holding a flower near a Bee that you find in the wild or using a lead will make it follow you. Although any flower will work, picking the flowers that you find in the area where you saw the Bee tend to be the most effective.
How to Breed Bees
Give Flowers to Two Nearby Bees

Giving flowers to two Bees at the same time will cause them to breed. You can use a lead, or breed bees in an enclosed space to prevent them from hovering away.

Bees will usually spawn in these Biomes with a Bee Nest and a small patch of flowers nearby, making it easy to start collecting honey.
Bee Behavior
Bees Become Angered When Attacked

Bees are generally passive, but will attack you or other mobs if angered. An angered Bee will have red eyes. Bees will attack you with their stinger which can poison you, however they will soon die afterward, even if you manage to breed them.
Other than attacking them, Bees can also be angered by taking honey from their nest without smoking them with a campfire, or destroying their bee nest.
Bees Make Honey in Nests or Hives

Bees can make honey by pollinating flowers and entering Bee Nests, which are naturally occurring, or Bee Hives, which the player can craft.
The rate at which Honey is produced depends on how many Bees are present (a maximum of 3 Bees can enter a nest or hive at a time). You can collect honey with an empty bottle, or use shears to collect honeycombs instead.
You can place a campfire underneath the Bee Nest or Hive while collecting the honey or honey comb to prevent the bees from getting angry.
