These shellfish can be prepared in many ways, including baking and frying, and can be purchased fresh or frozen. Once scallops are brought to room temperature, they cook quickly. Here's how to make sure they're done without overcooking.

Purchase scallops that are pink and smell good. Avoid them if they smell bad or overly fishy.

Bring scallops to room temperature, then prepare and cook them as desired.

Poke the scallop with a fork. If the scallop is done, the fork should bounce back slightly. If it's still mushy, continue to cook.
