I managed to connect my Samsung gear S2 to my iPhone running on ios14.3.
All you have to do is (on your gear S2) go to settings and scroll down and click on “connect to new phone”.
This will do a soft reset of the smart watch so you will probably lose your health info on your watch. You can open up the Galaxy Watch app on you iPhone and it will scan for your watch and it should show up allowing you to connect to it.
To be on the safe side make sure your Bluetooth on your iPhone doesn’t have the gear s2 already stored before doing any of this.

Everyone heard you YipTerry, but resetting your phone as a new phone isn't a solution.
Apple needs to fix this issue with their closed ecosystem. Android devices don't have random incompatibility issues from updating the OS like this.

Same problem with Iphone 12.

Seems to me Apple is purposefully doing this to drive business back to Apple Watch’s. Very Unethical!
