There is almost nothing in this world that tastes better than pizza hot out of the oven!

Unfortunately, when you’re living the low carb life, most pizzas are out of the question.

That’s why I’m so excited to share this cauliflower pizza recipe!

Instead of being a carb bomb like regular pizzas (and even some so-called cauliflower pizzas you’ll find at grocery stores), this low carb cauliflower pizza crust only has 5 grams of net carbs per serving!

Not only is cauliflower crust pizza low in carbs, it is pretty darn nutritious too! One serving provides:

  • 9 grams protein
  • 7 grams fat
  • 5% RDV vitamin A
  • 16% RDV calcium
  • and a whopping 88% RDV vitamin C

How to Make Cauliflower Pizza Crust

We’ve included steps to make cauliflower pizza crust two different ways: using frozen or fresh cauliflower. Both should have the same end result, it just depends on which type you have on hand.

If using frozen cauliflower:

Many stores now offer frozen cauliflower rice, which saves a lot of time! Prepare according to directions on bag, then drain and squeeze out all the moisture.

Skip down to the section titled “to make your cauliflower pizza dough.”

If using fresh cauliflower:

Chop into florets, steam until just cooked, then drain.

Add florets to food processor and pulse until you have cauliflower rice sized pieces. Use cheesecloth or a clean kitchen towel to squeeze out as much moisture as possible from the cauliflower.

To make your cauliflower pizza dough:

TIP: Take the time to squeeze, squeeze, squeeze out as much water as possible from the cauliflower. When you think you’ve done as much as you can do, try one more time. The dryer the cauliflower, the better the crust will hold together.

Combine drained and pressed cauliflower in a mixing bowl with cheese, eggs, and seasoning. Stir until all ingredients are well incorporated.

Spread on a pizza stone or baking sheet lined with parchment paper.

Use another sheet of parchment paper to press the dough into a flat circle, about 1/2″ thick.

Bake at 400°F for 25-30 minutes, until cauliflower crust begins to turn golden brown. Flip and continue baking for another 10 minutes until the crust is dry-ish and golden brown. (You will be baking another 5-10 minutes after you add the toppings).

Remove from oven and add low carb tomato sauce (this is our recipe) and any desired toppings. Return to oven and bake for 5-10 minutes until cheese starts to melt and toppings cook just enough.

Allow to cool enough to handle, slice, and enjoy!

Ingredients

  • 2 pounds cauliflower processed into pearls
  • 2 eggs
  • 1/2 cup cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1 teaspoon Italian seasoning
  • salt & pepper to taste

Instructions

  • Preheat oven to 400°F.
  • Chop cauliflower into florets, then steam until just cooked. Drain well.
  • Pulse cauliflower in a food processor until you have pearls, like rice. Use a cheesecloth or clean kitchen towel to squeeze as much moisture as possible out of the cauliflower.
  • Combine cauliflower pearls in a large mixing bowl with cheese, eggs, and seasoning. Stir until mixed.
  • Spoon pizza "dough" onto a baking sheet or pizza stone covered in parchment paper. Form a round shape with the dough.
  • Cover with another sheet of parchment paper and press to flatten to about 1/2" thickness. Use your hands if needed to finish molding your cauliflower pizza crust.
  • Bake for 25-30 minutes until golden and starting to dry out. Flip and bake for about 10 more minutes.
  • Remove from oven and add desired toppings. Bake for 5-10 additional minutes to melt cheese and cook toppings.
