Milk Gravy (Paula Deen) Community Pick Submitted by Kim D. "My grandmother used to make the BEST milk gravy! She would serve it over chicken fried steak and mashed potatoes. Unfortunatley, I never got her original recipe. I came across this recipe in a "Cooking with Paula Deen" magazine and I think this is very close to what my grandmother used to make!"   icons / ellipsis / ellipsis-horizontal save Download Print Share I Made This photo by puppitypup photo by puppitypup photo by puppitypup photo by Kim M. photo by Kim M. photo by Chef PotPie photo by Chef PotPie Ready In: 20mins Ingredients: 5 Yields: 3 cups Nutrition information

directions

  • ~NOTE~ This recipe will have more flavor if you use 1-2 tablespoons of oil from the oil you fried chicken fried steak in, or maybe even bacon grease. If you don't have that, no need to worry, you can use vegetable oil or vegetable shortening.
  • Heat 1-2 tablespoons oil in a skillet over medium heat.
  • Whisk in flour, whisking constantly for about 1 minute.
  • Slowly add milk, whisking constantly.
  • Stir in pepper and salt and continue cooking.
  • Whisk constantly for about 10 minutes, or until thickened.

  1. This is a good base, but you'll need to add meat and spice. What you wind up with here is essentially a milk roux. I like using a half package of bacon, but you can put any meat (sausage, etc.) in. First pour your olive oil in a cast-iron frying pan, then add two peppers (pasilla or anaheim), two shallots, and half the package of bacon. Fry till the bacon's done on medium high. Add the flour and stir into a roux. Add the milk, and stir until thick. This goes best on top of chicken breaded with italian bread crumbs and spices baked in the oven and vermicelli. Good stuff.   icons / ellipsis / ellipsis-horizontal TOW2163 Reply 2

  5. Initial recipe i made to the T. Was way too thin in the end result, ended up making another batch. What's cooking without altering the recipe a little bit, eh? Only used about 1 1/2-2C of milk and a little more Veggie oil. Also was using frozen chicken(Smite me later) so i had no access to grease etc. Threw in some bacon salt, celery seed, minced onion and the pepper. Tasted delicious, nice country gravy feel to it, but a little thinner. Went well on the potatoes and the chicken.   icons / ellipsis / ellipsis-horizontal pedrocamargo1999 Reply

  1. This is not Paula deen's recipe. There is absolutely nothing in this recipe to give it any flavor therefore you need to be using butter, or bacon grease or some type of meat grease. Paula deen's uses bacon grease which you can buy in the store and it's called Bacon Up. I used to save mine but it wouldn't stay good for very long.   icons / ellipsis / ellipsis-horizontal Anonymous Reply
  2. Your Grandma used bacon grease,as did mine. You can now buy it in the store. Try it :)   icons / ellipsis / ellipsis-horizontal Pneuma N. Reply See 1 Reply
  3. This is a good recipe, although to make 3 cups of gravy, my grandma would say you should use 6 tablespoons of the fat, and 6 tablespoons of flour. To dress it up "for company," substitute a can of evaporated milk for a cup of the milk.   BadBearKY Reply

<p><br /><br />The picture is of me and my husband at the Grand Canyon - November 2008. <br /><br />I've just started a food blog and would love for those interested in cooking and recipes to check it out. You can follow my food journey at <a href=http://onecookbookatathyme.wordpress.com/>http://onecookbookatathyme.wordpress.com/</a></p> <p>Cooking for family and friends is one of my favorite things to do. I spend most of my free time in the kitchen, either checking out Recipezaar or experimenting with a newly found recipe. <br /><br />My DH and I are both from Texas and we both come from Italian families. Anyone who stops by my house should be prepared to eat!!! I'm always forcing friends and family to try whatever it is that just came out of the oven. I know that is a horrible habit but I can't break it... I think it must be the Italian in me! LOL :) <br /><br />My sister (<a href=http://www.recipezaar.com/browse/getchef.zsp?id=85654>Cookin_Kit</a>) and I used to help my Mom (<a href=http://www.recipezaar.com/browse/getchef.zsp?id=124343>JudaThann</a>) in the kitchen a lot growing up. I guess that is where my love for cooking began. I also enjoy sharing the kitchen with my DH (<a href=http://www.recipezaar.com/browse/getchef.zsp?id=202688>Sgt. Pepper</a>). He doesn't cook as often as he did when we first got married, but he makes an awesome pizza and still makes them at least twice a month. He keeps his recipes for the dough and the sauce top secret, even from me. LOL <br /><br />I have two step-children. The oldest graduated from college and the youngest is a sophomore at Texas Tech. I also have two cats and a dog. When I?m not cooking or hanging out here at Zaar, I like to knit, garden, read, watch old movies, travel, take photos, scrapbook, volunteer at a non-kill animal shelter, and spend time with my family and friends. <br /><br /><img src=http://images.snapfish.com/34359%3C8323232%7Ffp47%3Dot%3E232%3A%3D8%3A3%3D429%3DXROQDF%3E23237%3C2733%3B9%3Bot1lsi alt= /> <br /><br />I'm a co-host with <a href=http://www.recipezaar.com/browse/getchef.zsp?id=21399>Karen From Colorado</a> in the <a href=http://www.recipezaar.com/bb/viewforum?f=37>Mexican/Tex-Mex/Southern United States Cooking Forum</a>.
