ingredients
Units: US- 1 -2 tablespoon vegetable oil or 1 -2 tablespoon vegetable shortening
- 4 tablespoons all-purpose flour
- 3 cups whole milk
- 1 teaspoon black pepper
- 1⁄2 teaspoon salt
directions
- ~NOTE~ This recipe will have more flavor if you use 1-2 tablespoons of oil from the oil you fried chicken fried steak in, or maybe even bacon grease. If you don't have that, no need to worry, you can use vegetable oil or vegetable shortening.
- Heat 1-2 tablespoons oil in a skillet over medium heat.
- Whisk in flour, whisking constantly for about 1 minute.
- Slowly add milk, whisking constantly.
- Stir in pepper and salt and continue cooking.
- Whisk constantly for about 10 minutes, or until thickened.

This is a good base, but you'll need to add meat and spice. What you wind up with here is essentially a milk roux. I like using a half package of bacon, but you can put any meat (sausage, etc.) in. First pour your olive oil in a cast-iron frying pan, then add two peppers (pasilla or anaheim), two shallots, and half the package of bacon. Fry till the bacon's done on medium high. Add the flour and stir into a roux. Add the milk, and stir until thick. This goes best on top of chicken breaded with italian bread crumbs and spices baked in the oven and vermicelli. Initial recipe i made to the T. Was way too thin in the end result, ended up making another batch. What's cooking without altering the recipe a little bit, eh? Only used about 1 1/2-2C of milk and a little more Veggie oil. Also was using frozen chicken(Smite me later) so i had no access to grease etc. Threw in some bacon salt, celery seed, minced onion and the pepper. This is not Paula deen's recipe. There is absolutely nothing in this recipe to give it any flavor therefore you need to be using butter, or bacon grease or some type of meat grease. Paula deen's uses bacon grease which you can buy in the store and it's called Bacon Up. This is a good recipe, although to make 3 cups of gravy, my grandma would say you should use 6 tablespoons of the fat, and 6 tablespoons of flour. To dress it up "for company," substitute a can of evaporated milk for a cup of the milk. BadBearKY Reply
