Old Fashioned Barley Water
Serves 2 Prep 5 mins Cook 60 minsIngredients
1/2 cup McKenzie's Australian Pearl Barley 1 cup sugar 1 lemon, rinded and juiced 10 cups waterDirections
Step 1
Rinse the barley well, cover with cold water and bring to the boil. Drain.
Step 2
Place barley into saucepan with lemon rind and water. Cook slowly for 1 hour.
Step 3
Add the lemon juice and sugar and stir until sugar has dissolved. Strain and chill.
Tip
Serve in a jug with lots of ice and fresh mint leaves.
Could also be mixed with dry ginger ale for a refreshing alternative.
Don’t throw away the cooked barley. Store in the fridge and for a nutritious and filling breakfast, warm through and top with yoghurt and fresh fruit pieces
