These Dry Rub Oven Baked Ribs are perfect for those times when you want tender flavor packed ribs but aren’t able to grill or smoke them.  They are perfect for those stormy summer days when outside cooking is not an option.

We are really experiencing a wet summer and if it is not raining than it is a gazillion freaking degrees. I feel like I live in the swampland!  If you have just about had your fill of cooking outside cooking these Dry Rub Oven Baked Ribs are perfect for you!  The flavor and tenderness are out of this world.  The dry rub can be prepared ahead of time and stored in the cupboard!!

How do you make Dry Rub Oven Baked Ribs?

First mix the paprika, brown sugar, cumin, chili powder, and cayenne pepper in a small bowl. Apply it to the meaty side of the ribs and allow to set for 30 to 40 minutes.  Now place the ribs meaty side down on a piece of heavy duty aluminum foil and seal them up well.

Bake at 275 degrees for 1 1/2 hours or until very tender. Remove from the oven and let sit until they are cool enough to safely remove from the aluminum foil.  Place the ribs rub side up on a cookie sheet.  Raise the oven temp to 375 degrees and baste with barbecue sauce.  Cook for 20 minutes then remove from the oven and baste again with barbecue sauce.  Return to the oven and cook for another 20 minutes.

I honestly prefer to grill outside in the cooler seasons.  I often knock the snow off my grill and fire it up but sometimes baked ribs are the way to go and they can taste just good as grilled or smoked. ! It takes a few hours to prepare these as they bake on a low temperature for a while. You will need to prepare a little in advance of your hungry tummy!  When they are completely done I like to let them rest for a bit and then serve up with extra Kansas City style barbecue sauce.

Recipe notes and helpful tips

  • Always remove the silver skin from your ribs before starting this and other rib recipes. Here is a great article with pictures on how to do it from Fine Cooking.
  • I like cayenne pepper in my rub however if you are sensitive to spicy food than omit it or add a very small amount at a time and taste the rub after each addition.
  • Slow cook the ribs in the aluminum foil until fork tender.
  • If you like your ribs a little crispy on the edges turn the broiler in the last phase for the final few minutes of cooking. However stay close as I have always found broilers unpredictable.
  • Sometimes I throw the ribs on the grill after the initial cooking of 1 1/2 hours.  I might do this if the rain clears and if I want to crisp the edges of my ribs.

Ingredients

  • 1 tablespoon paprika
  • 2 tablespoons brown sugar
  • 2 tablespoons cumin
  • 1 tablespoon chili powder
  • 1/2 - 1 teaspoon cayenne pepper
  • 1 large slab pork ribs silverskin removed
  • Kansas City style barbecue sauce

Instructions

  • Mix paprika, brown sugar, cumin, chili powder, and cayenne pepper in small bowl. Apply to meaty side of the ribs and allow to set for 30-45 minutes.
  • Place ribs meaty side down on heavy duty aluminum foil and wrap well to seal. Place on cookie sheet; bake at 275 degrees for 1 1/2 - 2 hours or until the ribs are tender. Remove from oven and let sit for 20-30 minutes or until cool enough to fully remove from the foil.
  • Remove from foil and place ribs rub side up on the cookie sheet. Raise oven temperature to 350 degrees. Baste with barbecue sauce and place in oven for 20 minutes. Remove from oven, baste again and cook for 20 more minutes.
