Magical Lion's Mane
Lion's Mane Mushrooms have become increasingly popular over the last few years and for good reason!

Where to find them
Lion's Mane Mushrooms have started to become more readily available in some areas of the US and I'm thankful to have a grower local to me where I get mine!

To find them in your area, I suggest first looking for local growers or searching your local international markets. You can also grow your own at home now with kits like this one!
The Method
Only a few simple ingredients are needed for this lion's mane recipe: mushrooms, vegan butter (or oil), tamari (substitute coconut aminos or soy sauce) and salt.
This Easy Method was inspired by Wicked Kitchen's Lion's Mane Steaks! Here's how to do it:
- Prep lion's mane mushrooms by removing any tough bits of substrate on the bottom and slicing or ripping into thick slices/pieces, at least 2-3 inches thick.
- Heat a cast iron skillet (or non-stick pan) over medium heat and add 1 tablespoon of vegan butter or oil, just enough to lightly coat the bottom of the pan.
- Add mushrooms to pan in a single layer, let cook for about 2 minutes untouched and then add another heavy pan, weight or panini press on top of the mushrooms and cook another 3-5 minutes. (see note about mushrooms with excess moisture).
- Carefully remove weight (make sure not to burn yourself and carefully wipe away any condensation). Flip mushrooms and add ½-1 tablespoon of butter or oil all around them (but not on them) and re-apply weight. Cook another 4-5 minutes.
- Once both sides have a nice, golden brown crisp, add 1 tablespoon of tamari and stir to coat, cooking 1-2 minutes longer until any remaining liquid is evaporated. Top with a light sprinkle of sea salt to taste and serve!
Tip: Each Lion's Mane will vary in water content and this may affect cooking time. If they seem very wet while cooking, let them sit for a few extra minutes, letting the weight press out the water.

How to eat them
Enjoy these pan fried lion's mane mushrooms as a snack or side dish for any meal. They are especially delicious served over creamy udon pasta! Or if you have some large slices, they are also delicious on a sandwich!
Either way, they are best served fresh! You can store them in a sealed container in the fridge for a couple days, but they are really best fresh out of the pan.

Notes
Enjoy fresh as a side or over top of some creamy Sesame Udon! NOTE on moisture. If your mushrooms have a lot of moisture, you can increase the cook time and allow the moisture to evaporate before flipping mushrooms.
