If you hit command-H, everything on your screen disappears ("H"ide).
No, Command-H only hides the active application, not everything.

Cmd-H should only Hide the active Application. Are all of your apps hiding when using cmd-H?
Long ago, there was a mode that would always hide everything else, but you had to access it via an undocumented preference setting. I don't know if it is still possible to use that mode.
And, to answer the question, no, there is no opposite to hide. The OS would have no idea what you wanted to unhide.

System Preferences > Keyboard, shortcuts tab. Examine what cmd+H is set to use. I wonder if it is set to 'Hide others' (normally cmd+alt+H). You can restore the defaults if you think that will help and are willing to lose other modifications.
You can also see that setting in the Applications own menu.
If that does not help you may need to investigate if an old 'defaults write' setting has altered the way it should behave. Have you migrated this OS from earlier versions? Does the same behaviour happen in another user account?

Go to the application’s menu and choose Show All. There isn’t a keystroke for this unless you set one up.

Additionally, Option-Command-H, will hide all other applications with the exception of the active one.
