ingredients
Units: US- 1 lb turnip greens, stems removed and leaves cut into shreds
- 3 slices center-cut bacon
- 1 cup onion, chopped
- 1⁄2 teaspoon sugar
- 1⁄2 teaspoon cider vinegar
- hot sauce, to taste (such as Tabasco)
- salt & freshly ground black pepper
directions
- Heat a quart of salted water to boiling in a saucepan. Cook greens until just tender, about 5 minutes; drain.
- In a skillet cook bacon. Remove and drain on paper toweling.
- Add onion to the skillet and cook until soft, 6 to 7 minutes, stirring occasionally. Add the greens and toss. Stir in the sugar and the vinegar and cook until heated through, about 2 or 3 minutes.
- Crumble bacon and sprinkle over top. Add a couple of dashed of hot sauce. Season with salt and pepper to taste and serve.

I've never had turnip greens until now -- but I'm a believer!!! These were easy to make and DELICIOUS! I only had a red onion on hand, so I used half of that for the regular onion. It was sweet and yummy. The only problem was this cooked down so much it only filled a small bowl in the end. It is easily one serving, especially if you liked it as much as me! I didn't boil the greens because I feel all the vitamins of the greens get washed away. Turned out amazing! I used 2 big head. I added 3 big garlic cloves. For the hot sauce I used garlic Tabasco. icons / ellipsis / ellipsis-horizontal Stacey A. Reply See 1 Reply

I now know I prefer the greens over the root when it comes to turnips. This recipe could make this true for anyone willing to try the bumpy, inedible looking tops of turnips! Served up with black beans rice and kielbasa what a meal not to mention red wine from Spain slightly chilled to cut the summertime humidity in Illinois.
