ROCK FISH Any one have any ideas? Or tryed this before? I think I want to try and see if I can smoke them with Salmon Candy.I have had some Manila clams and small oysters smoked and they where off the hook fricken yummy!!! #1 · Jan 6, 2011 Any one have any ideas? Here ya go.......... 54 cleaned razor clams Smoke for 45 minutes - smoking time depends on smoker used- clams should have a little color BUT do not over-smoke or will dry out. Then Add 2 cups water, 2Tablespoons salt, 2 Tablespoons cooking oil, 1 bay leaf, COOK in pressure cooker at 15 lbs of pressure for 25 minutes. Refrigerate covered with brine that clams were cooked in. ( I cut mine in bite-sized pieces before refrigerating. Tastes better if allowed to refrigerate a couple of days. He would pressure cook them first, THEN smoke them.... I could eat myself sick on them. #6 · Jan 16, 2011 I smoke Razors all the time! Salmon candy wouldn't be bad! I give them a quick dip in a Brine of Brown Sugar, Cherry Smoked Salt, Onion powder, Garlic, Cayenne and Stout Beer all mixed up and simmering at 65 degrees for about 1 hour. let them air dry and smoke till YOU like how its done. (I like 180 deg for 2 hours) BUT some people love to overcook their food so I let it be your discretion on heat and time. Once smoked you can wrap them around pieces of fruit, or cheese..YUMMM! Use the little buggers in Chowders, soups, stews or any way you like... I recently chopped some real fine and mixed them up in a parsnip puree, served under butter poached halibut fillet.
