I'm curious if anyone has found any uses for them BESIDES player traps? Like redstone mechanisms that can make good use of it? I remember when people would stick them between regular double chests for extra storage space but that functionality was taken away since you can put double chests next to eachother.

This means you can turn something on or off, while the chest is beeing used.
I like building trashcans to get rid of stuff like seeds or cobblestone. Sometimes i build them with a trepped chest, wich powers the hopper beneath, so the trascan only works if not accessed.

You can use trapped chests (in conjunction with comparators on chests) to automatically turn on an automation farm, as presumably you're only opening the chest to take stuff out (thereby creating room in your storage space for more drops).
Such a strategy works great with farms that do not require any player input to operate--pumpkin/melon farms, kelp farms, bamboo farms, cane farms, vine farms, cocoa-bean farms, mob grinders, villager farms, iron golem farms, potion-brewing factories, etc. It doesn't really work that well for semi-automatic farms as in these cases the player can just not plant/breed/etc to keep the farm going. In addition to the benefits of less lag and noise, this strategy also lets you be a good servermate by not needlessly hogging the mob spawns or creating excessive lag for basically no good reason.
