If you're anything like me, you always have those nights when you just need something easy. But at the same time, you would feel guilty if you didn't cook and a repeat of last night doesn't cut it. Sound familiar?

This steak foil packet is perfect for those kind of nights. It's essentially steak and potatoes, but with some flavorful additions to make it feel that bit ore special. You can really add what you like, but here I've gone slightly Spanish in flavor with peppers, onions, paprika and garlic.

Since this cooks relatively quickly and has minimal additions, I'd recommend you don't skimp on the steak as you will notice the difference. The best options are top sirloin or ribeye as both have good marbling and flavor.

Take a little time to cut everything up so that they cook evenly. That means similar sized pieces and the pieces of steak bigger than the potatoes.

Steps to cook steak foil packets

  1. Cut the steak into roughly 2 inch dice.
  2. Cut the potatoes into a dice smaller than 1 inch (peel or not as you prefer) and the pepper and onion into a similar size.
  3. Pre-cook the potatoes by either boiling or in the microwave until just cooked (boiled around 5min or 2min in microwave in a dish with some water).
  4. Mix together the oil, garlic, paprika, thyme, salt, pepper and lemon juice.
  5. Toss the steak, potatoes, onion and pepper in the oil mixture.
  6. Cut foil squares and divide the steak and vegetable mixture evenly between them.
  7. Seal up the foil packs and either cook on the grill for around 10 min or in the oven at 425F for around 20 min.
  8. Open up the pack and finish the steak either directly on grill or put the whole pack under the broiler for a couple minutes to brown.
  9. Serve directly in the foil pack.

Since these steak foil packs have a few vegetables in there, you don't particularly need anything else with them. However, if you want to make it a fuller meal you could serve a salad on the side.

Alternatively, you can add additional vegetables in with the pack such as mushrooms (halved or smaller, if big), or slices of zucchini.

These steak foil packets are an easy meal to put together, with minimal clean up, but without skimping on flavor. Change it up as suits, too, for a meal you'll soon find on regular rotation.

  • 2 cloves garlic crushed (2 cloves = approx 2 tsp)
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoon lemon juice

Instructions

  • Cut the steak into roughly 2 inch/5cm dice.
  • Cut the potatoes into dice smaller than 1 inch/2.5cm and the pepper and onion into a similar size.
  • Pre-cook the potatoes either boiling or in the microwave until just cooked (boiled around 5min or 2min in microwave in a dish with some water).
  • Mix together the oil, garlic, paprika, thyme, salt, pepper and lemon juice.
  • Toss the steak, potatoes, onion and pepper in the oil mixture.
  • Cut foil squares and divide the steak and vegetable mixture evenly between them.
  • Seal up the foil packs and either cook on the grill around 10 minutes or in oven at 425F/220C around 15 minutes. Check part way to see if it needs less or more time.
  • Open up the pack and finish the steak either directly on grill or the whole pack under the broiler for a couple minutes to brown.
  • Serve directly in the foil pack.
