- 1½ cups (225g) frozen strawberries
- 1 Tbsp (13g) granulated sugar
- ½ cup (75g) quick-cooking tapioca pearls
- 2 Tbsp (30ml) agave syrup maple syrup
- ⅔ cup (160ml) unsweetened oat milk† any unsweetened plant-based milk of choice
- 2 Tbsp (30ml) vegan whipping cream (optional)
- 1 tsp (5ml) pure vanilla extract
- 2 cups (220g) ice cubes
Optional toppings
- fresh strawberries
Directions
- To a saucepan, add the frozen strawberries and sugar. Cook over medium heat until the strawberries have thawed. Use the back of a spoon to lightly mash the strawberries.
- Remove the pan from the stove and use an immersion blender or standing blender to purée the strawberries. Set aside to cool.
- Cook the tapioca pearls according to the package instructions. For us, this took 5 minutes.
- Drain the tapioca pearls, and rinse under cold water to stop the cooking process. Add the pearls to a bowl and mix in the agave syrup.
- In a pitcher, combine the oat milk, whipping cream, and vanilla.
- Divide the tapioca pearls between your glasses, and spoon some of the strawberry purée over the pearls.
- Top with ice, followed by the vanilla cream milk. Finish with some fresh strawberries if desired. Enjoy!

- †Nutrition tip: aim to use plant-based milk that is fortified with calcium.
Storage
- This bubble tea is best enjoyed immediately.
- The strawberry purée can be stored in an airtight container in the fridge for up to 1 day.
- The vanilla cream milk can be stored in the fridge for up to 3 days.

Thanks for your interest in the strawberry bubble tea recipe 🤗 Coconut-based vegan whipping creams work well, although oat or soy-based versions are great too. For this recipe, we used the soy-based Alpro whipping cream. The agave adds sweetness, but since it’s mixed with the tapioca pearls, it won’t overpower the drink. Can can omit or reduce it, and adjust as needed to match your taste. We find it adds just a nice hint of sweetness!

Where do I get those glasses and glass straws shown in the pictures/video? I was hoping for a link. 2. I'm not a fan of tapioca. So, should I still add Agave or Maple syrup to the drink? 3. Regardless of that answer, which is better to use Agave or maple syrup (in your opinion)? 4. The video didn't talk about the option of adding tea. The syrup helps add a sweet flavour, so you could give the bubble tea a taste first, and then add syrup to desired sweetness. 3. Whatever syrup is most accessible! 4. Black or green tea would work nicely in this one. We've also heard positive reviews with matcha! You can add steeped tea in the pitcher in step five for ease.

In the meantime in case it helps, for the first 4 years we used Wix to build and host our website. It has a great visual editor and we highly recommend it for anyone starting out with their own website. At the start of 2021, we moved over to the website you're currently on, which we designed and coded ourselves from the ground up. Hopefully we can share more on the process in the future 😃

It's very sweet so next time I'll be adding less agave syrup, also I was too impatient and the puree wasn't really cold when I used it so all the ice cubes melted really fast haha. But it was delicious anyway and next time I'll just need to be more patient :-) I found this also works as a strawberry milkshake without the tapioca, if that's not really your thing! (I just couldn't find it in the store haha) Thank you for this lovely recipe!

Making homemade boba pearls is a lovely idea though if you have the time and ability to make them. This drink is also refreshing and delicious without the pearls so you could alternatively omit them if desired 🙂

The sweetness was perfect and the strawberry and cream flavours alongside the chewy tapioca pearls were so delicious!
