Coonhounds weren’t recognized as a breed until the 1900s, while slavery was abolished in the mid to later 1800s. How about you look at a time line or something.

Dude they might not have been recognized as a breed, but think about this if the word coon was and still is used as a derogatory term for black people then what’s the point even defending the name?
Bloodhounds and bulldog mixed were used to hunt slaves but rarely coondogs due to the fact that they were still being developed and weren’t necessarily even in America at the time. They were “finished” as a breed in America but the original “prototypes” used as foundation stock in the breed usually came from other countries.
So the name coondog was coined due to the fact that they chased raccoons and similar animals. Not because they chased slaves. “Coon” can be derogatory but in this instance it’s highly unlikely it was used in a derogatory manner.
They’re called ‘coon hounds’ because they’re used to hunt raccoons. Also, “coon” as a racial slur came as a result of minstrel shows, which were developed in the 1840. Coonhounds themselves (existing before official 'breed recognition’ was a thing), can be traced as far back as the 1700s as being labelled 'coonhounds.’ Because they were initially bred to hunt raccoons, and are named in the same way that foxhounds, boarhounds, and harehounds.
