| Centralia, MO | I've been trying to fix pot roast for a number of years. It just never seems to turn out like moms. I've tried leaving the water out putting a little water in. | NC Iowa | I prefer a chuck roast. There is a good amount of fat in them. I put it in the oven in a roasting pan at 285 degrees for about 5 hours. I add a can of beef broth a can of diced tomatoes and one onion. I salt and pepper to taste. I also add a bunch of carrots and potatoes so the entire meal is made in one pan(less dishes to wash). | |

| Agree, use a chuck roast, add potatoes, carrots and onions with some seasoning on top of the meat. No water added. Cook in the oven at 325 for 1.5 hours, in a covered roaster pan, Works perfect. | |

| I use a crock pot. Put in a can of beef broth. Season to taste. I put it on in the morning. Cook on low and enjoy it in the evening. | |

How long are you cooking it, set on high or low, how big is it, etc. Not knowing the particulars, I would recommend a starting point of using a slow-cooker liner bag, cook on low and with enough water to just cover the bottom. Flip it at 3 or 4 hours. I've never had a problem with putting one on low for 7-8 hours and it not drying out. If you want to try something different, I've got a recipe where you throw in Dr. Pepper and a few other things and it makes its own gravy as it cooks. Surprisingly it's not sweet and tastes pretty much like regular gravy. | |

Your low may be set way to high and it just scorches it on high.Does your lid seal well on top? | |

| Westside, IA | What I do is season the roast, put in the crockpot, add onions and potatoes, 2-3 cans of beer, and set on low. My crockpot automatically switches to warm after 8 hours so I usually set overnight so I have a meal ready for the next day. The beer doesn't dry it out like water does IMO. | |

| 95 miles NW of Quitaque, TX | Simplest way to cook a roast is to get a pan, fill it ~0.5-1 of water, season the roast with pepper, salt, chipolte Tabasco, etc. and cover with AL foil. Cook ~1.5 hours at 350F. Take the AL foil off and turn the roast over. Re season the top. Put the AL foil back on the pan. Cook another 1-1.5 hours at 350F. Take the AL foil off, turn the heat off and put the pan back in the stove. Start cooking the other vegetables, etc. Watch the roast through the window. When it darkens to the darkness you want pull the roast out of the oven. Let sit for a few minutes. Carve up and serve. The times will change a little for the different types of roasts. | |

| Easy way, put it in the crockpot frozen with dry onion soup mix sprinkled on top. Medium heat. It will literally fall apart. Another question, is this corn fed beef or grass fed. Iv'e found corn fed is easier to cook. (has more marbleing ?) I've bought roasts from our local grocery store when I'm out of my freezer beef. They have NEVER turned out well, tougher, not much flavor. But if you have a Fareway store near you, their beef is excellent and their butcher staff can give you good tips on cooking too! | |

north central Iowa, Hampton | I agree with Lauritson-- I like to use a 3 - 4 lb roast (prefer arm, dislike chuck--too fatty). About 10-12 hours before serving, slice an onion and place half in the bottom of my crock pot. Insert frozen roast, cover top with the other half of the onion. Place 2-4 diced cloves garlic on top of the onion, liberally sprinkle with black pepper (1/4 tsp or less). No water. Cook on low. It should be "fall apart" tender. If it's tough or too chewy, you've cooked it too long. Crock pots do vary. I have one that runs too hot. I still use it on low, but for probably 9 hours. good luck! | |

 | Wife uses chuck roast. Sears the roast on the stove top, then puts in a pressure cooker with some water, chunks of potatoes, onions, & carrots. Nit sure how long she cooks it but the meat is always tender enough to cut with a fork. | |

| EC North Dakota | Some roasts are so lean, they're very easy to dry out. Chucks are fool proof. I prefer to start with frozen, cook it low and slow but the most important part is to take it out early and let it rest. It will continue to cook while it's resting. My wife will make 20 perfect to each not so perfect. :) | |

| Here is a bit of advice, you roast meat in an oven. So do just that with a pot roast. Crock pot cooking is never as good in my view. | |
