To most Americans, slurping food is considered impolite — but when eating ramen, it’s perfectly acceptable and even encouraged. In a video for the Dallas Morning News, chef Teiichi Sakurai — Dallas’s undisputed king of Japanese food and owner of recently opened Ten Ramen — offers some guidance on how to eat a steaming bowl of tonkotsu. As it turns out, “you can eat ramen any way you want to” — but one thing Sakurai does insist upon is speed, otherwise the noodles soak up the broth. “Eating a bowl of ramen shouldn’t take more than 5 minutes,” he says.
