I mean what are actually definitive edition games. I have seen many games having a very long series but then they(the game company) suddenly releases the definitive edition of the game which is generally just a reboot of the whole series. So please explain me what are definitive edition games??

Its marketing.  Sometimes they include all DLC, sometimes some DLC.  Sometimes they're remastered, other times they are not.

Definitive, legendary, ultimate, etc.  Same shit, different wordiness.

"Caveat emptor" applies, particularly with games.
