hey guys, i feel i should know the answer to this but i don't. what is a half sheet cake size?

I consider an 11x15 to be a half sheet, but I know others consider it a 12x18.....

11X15 would be good since that is the size pan i have

My half sheet is also the 11x15.

OK, so you all say a half sheet cake is 11x15.I have a 9x13 pan, what would you say that is andwhat is the size of a full sheet cake???

I too would love to know the answers to those questions! I always go by the size and # of servings, never the terms half or full sheet.

Just jumping in here.....I web searched commercial sheet cake pans "full sheet" and all that I have seen states the full size dimensions are 18x26. Which is just a bit bigger than 2 12x18 pans put together.GayleSE Michigan

I also did a google search on Sheet cake sizes1/4 sheet cake is 9x12 which gives you 35pieces1/2 sheet cake is 11.x15 and gives you 48 piecesfull sheet cake is 18x24 and gives you 54 piecesSo, I have been baking a 1/4 sheet cake!!!

ladies, question: the customer said she wanted a half sheet cake 1 layer (servs. 30 by wilton) but then also wants it torted with a raspberry filling. how much would you charge for this cake? normally for a 1 layer 11X15 i charge 1.50/serv. i was thinking since she wants to fill it charge 2.50/serv. and then 7.00 for the filling?

It would be interesting to know what dimensions they are using. The 18x24, to yield 54 servings, would have to be cut into 9 rows by 6 columns. That would make the cake pieces 2" x 4" (assuming a single layer cake.The 11x15, to yield 48 pieces, would have to be cut in 6 rows by 8 columns, which would make the cake pieces less than 2" x 2" (assuming a single layer cake).The 9x12, to yield 35, would have to be cut in 5 columns by 7 rows .... again pieces of less than 2" x 2".BUt this is EXACTLY why I never use "half" and "full" to describe the size of the cake. If someone asks for my price for a half sheet, I turn it back on them and ask, "What size cake is that?" 10 times out 10, they have no idea. (So why the heck did they ASK for a size that they have NO IDEA how big it is? )

I am so glad I read this thread. I never knew what a full or half sheet was. anytime someone asked if I could make a full sheet I've actually been making a half sheet. Hhhhhhmmmmm........at least it was donated. Thanks for this thread.

Yes, always quote the actual dimensions and number of servings to the customer... I know the names vary quite a bit, but if you walk into a restaurant supply store and ask for a full sheet pan, it will be 18x24. It would then follow that a half sheet is 18x12 and a quarter is 12x9. Those are the sizes I use.

For customeres I don't even bother w/ the sheet size. I just offer them small, medium or large sheet cakes. That is 9x13, 11x15 or 12x18 respectively. Seems as if the large grocery stores have sizes in between what I offer.

I use MagicLine cake pans. Great pans by the way, life time warranty!!!!Here how I work it (california)9x13 single layer split with filling serves 25@ $3512x18 single layer split with filling serves 50 $55Full sheet ( 2 12x16's) pushed together serves 100 and I charge $110. 9x13 is usually considered aquarter sheet. 12x18 is usually a half in my shop. Charmaine49, It's not being nosy but my son and dil don't want to know the sex before hand. These are the sizes I use and the prices I'd like to use. I say like to because I haven't been selling cakes for the last year and am just getting back into it. It's been real hard getting my cake groove back after Becci died and I lost my will to decorate. But I'm back now so I'll see how the new pricing goes. I deliver too so I may have to consider adding something on for gas. I live 12 miles out of town and have only ever had one customer pick up her cake. And that was because she was driving by my house to the baby shower. My 1/4 sheet is 9x13 - single layer $25 - tort/fill $351/2 sheet is 11x15 - single layer $40 - tort/fill $50full sheet is 2 - 11x15's together - $80 - tort/fill $100
