3. Mexican Corn

This is the most delicious street corn (esquites) recipe right now! A truly authentic Mexican street food dish, that goes well as one of the options to serve with quesadillas. The secret to this Mexican corn recipe is a dollop of our Chipotle Mayo. It brings it to a whole new level and adds that irresistible dimension of smoky flavour. Mexican black beans are a classic to serve with any quesadillas. Our lovely Cantina Beans (authentic black beans with their juices) are waiting for you to warm up and have alongside your quesadillas, or just have them on the side. If it’s the latter, you can garnish them with some finely chopped onion, tomatoes, chillies, coriander, some scoops of avocado and dollops of creme fraiche! Delicious!

8. Pico De Gallo

Serve our pico de gallo recipe along with your quesadillas. It’s one of the easiest and freshest salsas there is and you can serve it with or on just about anything. We have combined fresh tomatoes, raw onion, chilli, lime juice, coriander and our Smoky Chipotle Fajita and Taco Mix to make this very simple dish. The more chilli you add, the spicier it is!

Best Served With: Vegetarian Quesadilla

9. Street Corn Nachos

Street corn nachos are the perfect accompaniment to quesadillas for their delicious combination of flavours, including creamy corn, tangy cheese, and vibrant toppings. The contrasting textures of crispy chips and creamy corn enhance the dining experience.
